The Expat Woman

Indian chicken and potato casserole

Ingredients

4 chicken thighs

4 baking potatoes chopped into cubes

1 small yellow onion chopped

1 jar of Tikka Masala from Fresh and Easy ( available at Trader Joes)

1/2 cup of sour cream

Handful of cilantro leaves, chopped.

 

Instructions

Preheat oven to 425 degrees F.

Place the  chicken thighs in a casserole dish

Add chopped potatoes and yellow onions

Pour  the jar of tikka masala sauce over the chicken, potatoes and onions.

Cover and bake for  an hour

Uncover casserole dish for the last 10 minutes

Serve with sour cream and cilantro
