Turkey, potatoes and spinach curry

Want to spice up that leftover Thanksgiving turkey?

Try this easy and mouth-watering turkey curry.

Ingredients

1 tbsp coconut oil or any other cooking oil

1 teaspoon cumin seeds

1 small onion

2 cloves garlic crushed

1 dried red chili pepper

1 tbsp curry powder

2 – 3 cups leftover turkey chopped into cubes

3 small potatoes

1/2 pound fresh spinach roughly chopped

2 small tomatoes

1 can coconut milk

2 cups chicken stock

salt to taste

1/4 cup chopped fresh cilantro

 

 

Instructions

Boil the  potatoes until tender, drain and chop into cubes.

Heat the oil in a large pan and when hot add cumin seeds and let them brown

Add the chopped onion and cook till translucent.

Add the garlic cloves and brown.

Add the curry powder and dried red chili pepper and cook for 1 minute.

Add the chopped turkey and cook for 4-5 minutes.

Stir in the chopped tomatoes and coconut milk and chicken stock, cover and cook for 10 minutes.

Stir in the potatoes and spinach and cook till spinach wilts.

Add salt and and cook for 1 minute.

Garnish with cilantro

Serve with brown rice, quinoa or tortillas
