Wow your guests with this healthy and delicious vegetarian side dish at your Thanksgiving party.
1 pound green beans, ends trimmed
1 tablespoons coconut oil
2 cloves garlic, minced
½ cup dried cranberries
¼ cup slivered almonds
Salt to taste
Fill a large pot with water and bring to a boil over high heat. Add beans and cook for 3 minutes, until crisp tender. Drain beans. and place on a paper towel to remove the excess water.
Heat a saute pan over medium heat. Add coconut oil and swirl to coat pan.. Add garlic and when slightly brown, add green beans and cook, stirring frequently for about 2 minutes. Season with salt. Add the cranberries and stir for another 2 minutes. Transfer to serving dish. Garnish with slivered almonds. Serve warm or at room temperature.
